Baked Eggs With Ham & Parmesan
Ingredients: 3 eggs, 3 slices of your favorite thin sliced ham, 3tsp of grated Parmesan.
Method: Spray the a muffin tin with oil. Lay the ham slices into the muffin cases and crack the eggs into the tin on top of the ham. Bake for 5-6 mins. Sprinkle on parmesan, bake for another 5-mins or until the cheese starts to brown. Leave to cool on a cake rack. Make sure you take them out the tin while still hot or they will stick. I used a plastic knife to get them out.

The one critisium I would say about these baked egg snacks is they are fine when when it’s not to hot on the trail. Although I eat one (and it was fine) on Sunday I had another 2 with me. In the blazing sun I just didn’t really fancy eating the others.
