Chocolate Seed Pods

It had been a while since I had experimented with any new home made trail food. I had been so into just eating variations of my flapjacks and bananas when out riding that I just didn’t really need to bother with anything else. A few weeks ago however I decided I wanted to try some things and stumbled across some recipes for no cook seed based snacks. I didn’t have all the ingredients to hand so I just started experimenting with what ever was in the cupboards and I liked the results. I bought a few more things and now I have a couple of variations on a theme. I’m planning to write these up over the coming weeks and here’s the first.

Ingredients: Oats 120g, Sunflower seeds 50g, Pumpkin seeds 25g, Golden Syrup 2 tbs, Chocolate spread 180g (use whatever flavor you like. The ones pictured were chocolate-orange but I think plain is probably better.)

Method: Stick it all in a bowl and start mixing. You will need to get your hands dirty on this one but if wet your hands first it can help prevent the mixture sticking to your fingers so much. It will seem like it’s not going to mix and that it’s too dry but keeping working it and it will eventually soften and come together. Put in the fridge for 20mins to firm up.

Take it out of the fridge and start rolling balls from the mixture that are about 1 inch across. Again wet your hands first and rinse them again every 2-3 balls to prevent the mixture sticking to your fingers. You should get 9-10 balls if you have followed the quantities above. Put them on a tray and put back in the fridge to firm up again. Store them in a sealed box. I think they will probably last about a week but they tend to disappear far quicker than that.
